It’s no secret that I love muffins. You might even go so far as to call me a muffin addict. There’s no shame in loving muffins this much, is there? They are one of my favorite keto snacks.

I daresay that I have more keto muffins recipes than any other blogger out there. No surprise, really. I’ve been doing this low carb thang for over a decade and I am quite proficient at keto baking. And did I mention that I love muffins?

My love of muffins did not start in my low carb days. Oh no, I’ve had a very longstanding love of all things muffin as far back as I can remember. It might be hereditary, as my mother loved them too.

And now I am passing this obsession on to my own kids!

The Benefits of Keto Muffins

Thank goodness that my favorite breakfast treat is so easy to make low carb and gluten-free.

It took some trial and error at the beginning of my keto baking career to get low carb muffins right. But once I figured out the right proportions of low carb flours and other ingredients, I couldn’t stop making more variations and flavors.

Here’s what I love about low carb muffins:

  1. Easy to make: Muffins are one of the best recipes for a keto beginner to try. They are more forgiving than cake and usually take a single bowl to prepare.
  2. Easy meal prep: Almost without exception, keto muffins can be made ahead and frozen. I make big batches and pop them into a ziplock bag. They can last for months and warm nicely in an oven or microwave.
  3. Portability: Muffins make a great grab-and-go breakfast or snack. Take them to work, to the beach, to a party, or wherever you need to go. Some recipes, like my Keto Pecan Pie Muffins, are even sturdy enough for travel.
  4. Family Friendly: Depending on your choice of flavors, muffins are kid friendly! Add a few sugar-free chocolate chips and they’re instantly a hit.

    I am so grateful to have found your recipes Carolyn. However I too, am having trouble with some of the baking since I live at a higher altitude. Here are the rules that apply to conventional baking at a higher altitude: High Altitude Baking — Good Rules of Thumb
    Oven Temperature. Increase by 15-25℉ …
    Baking Time. Decrease by 20-30% …
    Flour. Increase by 1 tbsp at 3,500 ft, and by 1 tbsp per 1,500 ft. …
    Sugar. Decrease by 1 tbsp per cup. …
    Liquids. Increase by 1 to 2 tbsp per 1,000 ft, and 1 ½ tsp per additional 1,000 ft. …
    As you can imagine it is difficult to translate these ‘rules of thumb’ to keto baking. Any advice would be much appreciated. I am happy to experiment.

      I am so sorry, Jane but I’ve rarely baked at altitude. I do believe most of those rules apply still. When we were in Idaho a few summers ago, I found that my muffins needed more structure so increasing the flour a bit is important, for sure!

        Thanks Carolyn…I was living in Mexico for 22 years at 6500 feet and boy that made baking interesting…home in Canada now at a much lower altitude (Edmonton, 1500′) but still seems to make my keto/low carb recipes lacking the rise I would like. Oh for heaven’s sake, I haven’t said which recipe I am trying to make: strawberry cream cheese scones and key lime scones. I have tried a tsp. of psyllium husk and an additional egg and that helped but could still be better. I shall let you know how I make out. I drool over your recipes constantly.

      Bran is not typically low carb. There are ways to fake it with flax but a lot of people don’t like flax.
