Now you might be asking how in the world this bark could solve any of your problems. I mean, it can’t possiblydrive out to the insane zoo of a mall to buy all of thoselast-minute gifts for you. Nor canit plan, cook, andprepare a glorious feast for the 30 to 40 dysfunctional family membersthat will be inhabiting your pristinely-decorated home.

Wellllll….just hear me out.

If you need an extra treat to serve your guests,this Loaded Peppermint Bark is insanelyeasy to make. I pinky promise!!! No baking! No cooking! It literally takes minutes to prepare, and it can also be made way ahead of time.

Most of which are items that I’m sure you already have in your pantry. The only ingredient you might not have on handis the peppermint/candy cane white chocolate. Out of convenience, I ended up using what I already had which was a mix of two different kinds–Wilton’s candy canecandy melts (found at Michaels) and Hershey’scandy cane white chocolate bars (found at Target). You can use one or the other. If you can’t find either in your area, just add some crushed candy canes to some melted white chocolate. There really is no science to making chocolate bark, so don’t stress about using the exact ingredients that I used. The last thing we want to do is add more stress boogers to your plate. Gross…

Speaking of stress, here’s an interesting little tidbit. It has been scientifically proven that the scentof peppermint has the power toreduce stress andboost your energy while also making you feel happier and more invigorated. Now guys, if that isn’t a good enough reason to make this chocolate bark, I don’t know what is.

Here’s another idea! If you’re a little short (or forgetful) on holiday gifts, this bark makes an excellentgift. I mean, who doesn’t lovewhite chocolate, peppermint, Oreos, marshmallows, M&Ms, and sprinkles?? Trustme, I’m sure your friends would appreciate it way more than a re-gifted candle, or that natural-organic-gluten-free-pesticide-freebath soap you “never” used.

This stuff is so addictive, I wanted to call it “Christmas Crack”, but I thinkSanta’s elves claimed that title for the pixy sticks they snort to get them through toy-making season.

Loaded Peppermint Bark

Minty Oreos, marshmallows, and M&Ms embedded in peppermint-speckled white chocolate and drizzled with dark chocolate! Don't forget the sprinkles!

Ingredients

  • 1 (15.25 oz) package mint Oreos, divided
  • 1 cup mini marshmallows
  • ½ cup mini Christmas M&Ms divided
  • 24 ounces peppermint white chocolate*
  • ¼ cup semi-sweet chocolate
  • Sprinkles

Instructions

  • Line a baking sheet with waxpaper; set aside.

  • Coarsely chop or break the Oreos into pieces. Scatter all of the marshmallows, most of the broken Oreos, and half of the M&Ms evenly overthe lined baking sheet.

  • In a medium microwave-safe bowl, heatthe peppermint white chocolate in the microwave for one minute. Remove, stir, then reheat in 30 second intervalsuntil chocolate can be stirred smooth.

  • Pour melted white chocolate evenly over the dry ingredients on the baking sheet. Use a spatula or the back of a spoon to spread the chocolate over every piece, trying your best to make sure that everything adheres to the chocolate.

  • Immediately top withthe remaining broken Oreos and M&Ms.

  • In a small microwave-safe bowl, melt the semi-sweet chocolate in the microwave until smooth. Drizzle chocolate evenly over the bark, then top with the sprinkles. Chill bark in the refrigerator until chocolate sets before breaking into pieces and serving.

Notes

*I used a combination of Hershey's Candy Cane white chocolate bars and Wilton's Candy Cane candy melts.

*Bark will keep in an airtight container at room temperature for up to 2 weeks, in the fridge for 1 month, orin the freezer for 6 months.
