Ingredients
- 1 lb 450 g green cabbage
- ¾ cup 180 ml mayonnaise or vegan mayonnaise
- salt or ground black pepper to taste

Making low carb simple
Instructions
Instructions are for 4 servings. Please modify as needed.
Shred the cabbage with a sharp knife, mandolin slicer or a food processor.
Place in a bowl and add mayonnaise, salt and pepper. Stir well and let sit for ten minutes.
Tip
Add more flavor by adding a splash of lemon or vinegar, dijon mustard, and finely chopped parsely.
And don't forget to make a big batch... coleslaw keeps in the fridge for 3 or 4 days.

Pretty bland. I added a touch of ACV with the mother and some mustard for flavor. I also add @ 1/8 tsp caraway seeds as well.

The "mother" is that cobweb-like cloud that develops in the apple cider vinegar.

Another bland slaw recipe because it doesn't include the PURGE. Cabbage needs to be purged or it will be overly crunchy and bland from the water in the cabbage diluting the spices and not allowing the flavor to develop.

Never 'purged' a cabbage in my life and I love coleslaw, I make alot of it and it is always super tasty and I love that full of crunch texture....who wants soggy coleslaw?

You have probably seen "the mother" in some unpasteurized vinegars. It is murky, and somewhat slimy looking found at the bottom of vinegar jugs. This can often be seen after it is being stored for a while. "The mother" is what the vinegar is produced from... it is a live bacteria. Un pasteurized vinegar that has a "Mother" are believed to be better for your gut health.

For a more balanced flavor add some white vinegar and a dash of sugar substitute. Chopped cilantro is one of my favorite additions.
